Ginger Steamed Mahi-Mahi

Experimented and had this for lunch today and turned out to be quite yummy.

Ginger Steamed Mahi-Mahi with roasted potatoes and veggies.


Ingredients

  • 1 piece frozen mahi-mahi
  • 1 small red potato
  • 1/4 zucchini
  • 1/2 bell pepper
  • 1/4 cup diced ginger
  • 1/2 bay leaf
  • Mrs. Dash No Salt Garlic Herb
  • Black pepper powder
  • Slice of lime

Preparation

I use a convection cooker like the one below. Great for quick little meals and can cook from frozen. I got this from Asian stores, but recently saw one like it at Home Depot.

Cut the red potato into small pieces (I did 1/8th pieces) and cook it for 10 min. with 225 degrees Centigrade temperature setting. In the mean time, place the frozen mahi-mahi on a piece of aluminum foil (large enough to wrap it) and add the ginger, bay leaf, garlic herb and black powder, then squeeze lime over the whole thing.

Wrap up the foil and add to the convection oven with the potatoes and cook for another 10 min.

While that’s going on, cut up the bell pepper and zucchini. My convection cooker came with 2 tiers of grills. I covered the higher one with aluminum foil, placed the veggies on top and seasoned with a bit of the garlic and herb.

Add the above into the oven and cook for another 5 minutes. For a more grilled/dry fish, you may choose to open up the foil before adding the top layer.

When done, just place everything on a plate and enjoy. I added half a tomato, diced/sliced, with my lunch.

Sound tasty, Mahi is one of my favorite fish these days. I’ll try this in a regular oven to see how it turns out. Might be fun on the grill in the summer as well.
